Marinated Barbecued Shrimp

Beware of party crashers lured by the tempting aroma from your grill!
Yield: 4 servings

1 pound peeled and cleaned shrimp, medium or large

1/4 cup olive oil

1 tablespoon chopped parsley

3/4 teaspoon basil

1/2 teaspoon oregano

2 cloves garlic, minced

3/4 teaspoon salt

2 teaspoons coarsley ground black pepper

2 tablespoons lemon juice

 
  1. Place shrimp in a large bowl. Combine all other ingredients and pour over the shrimp. Mix well. Refrigerate for at least one hour.
  2. Put shrimp on skewers and cook over hot coals for three minutes on each side. Use extra marinade to baste shrimp while it cooks.
